To enjoy your crispy, crunchy snacks, like Samosa, Pakoda, etc. a sauce is must. It tastes yummy if it is sweet and sour (Khatta- Meetha). But it is not healthy as many such sauces contain lots of food additives and preservatives mixed to increase their shelf life, and eating this regularly can definitely affect our health. So what to do? No problem, there is a solution, we can make a tasty and yummy Khatta-meetha sauce at our home, that too without adding any preservatives. The following recipe will explain all about how to make this sauce at home.
KHATTA MEETHA SAUCE
INGREDIENTS
• MAIN INGREDIENTS:
1. Tomato - 4 (Medium size) 2. Onion - 1 (Medium size) 3. Salt - As per taste 4. Dextrose – 4 table spoon 5. Chat Masala – 1/4th tea spoon 6. Sundae Masala - 1/4th tea spoon 7. Dhana Jeera Powder - 1/4th tea spoon
METHOD:
Wash all the tomatoes properly.
Give 4 slits on the tomatoes at the end. (so that its skin peels off completely).
Cut onion into 4 pieces.
Now cook tomatoes and onion in a Pressure cooker. (Approx. up to 3 whistles).
Let it cool for some time.
Peel off the skin from all 4 tomatoes.
Now grind it in a Mixer. (Both Tomatoes and Onion).
Strain the mixture with strainer. (To remove the excess water and seeds.)
This strained and removed water can be used as a Vegetable stock.
Now keep a kadhai (Pan) for heating on either Hotplate, Gas burner or Stove as per the availability and pour this mixture in to it.
Add all the Masalas (Chat masala, Sundae masala and DhanaJeera Powder) to this mixture, and give a continuous stir.
Consistency of the mixture should be semi solid. (Not too thick or too thin).
Now after mixing all the masalas, add salt and dextrose to the mixture.
Stir it continuously to avoid formation of lumps.
Once it starts boiling and becomes thick in consistency, switch off the gas, and let it cool.
Your Khatta Meetha Sauce is now ready.
After this Sauce cools down to room temperature, pour it in a bottle and keep it in a refrigerator.
Since we are not using any preservatives other than salt, this sauce will last for 2-3 days. So make sure to always prepare it freshly whenever required.

P. S. - TO MAKE REGULAR TOMATO SAUCE OMIT ALL THE ABOVE MASALAS. JUST ADD SALT, DEXTROSE AND PINCH OF SUNDAE MASALA, TO TOMATOES AND ONIONS. REST ALL METHOD REMAINS SAME.
