LOW CALORIE CREAM OF PALAK (SPINACH) SOUP (WITHOUT ACTUAL CREAM)
INGREDIENTS:
• MAIN INGREDIENTS: 1. Palak (Spinach) - 1 bunch 2. Boiled Cauliflower - 100gm 3. Onion - 1 (medium size) 4. Garlic - 2 cloves 5. Green Chili - 1 small 6. Milk - 100 ml 7. Salt - As per taste 8. Oregano/ Coriander Cumin powder- ¼ th Tea spoon
METHOD:
First soak all the vegetables with their intact skin in Luke-Warm water with added turmeric and salt for 15-20 mins. After 15-20 mins wash them with clean water.
Then chop roughly 1 bunch of Palak (Spinach).
Chop the onion, garlic cloves and green chili.
Now heat a kadai (Sauce pan) on Gas/Stove/Hotplate after pouring some water in it.
Put the chopped palak (Spinach) in it and steam it for 5-7 min.
In a mixer grinder, add boiled cauliflower, chopped onion, chopped garlic and green chili, little salt and little milk.
Grind everything to a smooth paste (Cauliflower Puree).
Add remaining milk if required (optional).
This cauliflower puree is our CREAM.
Also grind steamed palak in a mixer to make a smooth paste(Palak/spinach Puree).
Heat a pan and add Palak (Spinach) puree to it. Stir it well.
Add Cauliflower paste to this (Which is our cream). We get creamy flavor and same taste.
Add veg stock (Remaining water from boiled palak/Spinach) to this.
Now add salt, oregano/Coriander-Cumin powder and again stir everything well.
Cover it and let it simmer for 5-7 min.
Bring it to boil and serve immediately.
This can be taken as a soup before meal.
Enjoy your Hot Cream of Palak (Spinach) Soup. Completely without Cream.
